As with any tool you use, choosing knives that feel balanced and comfortable in your hand is essential!

Choosing knives made of high-carbon stainless steel, that has the blade running through the handle and are rivited in place make for a quality tool. Knives made with high-carbon stainless steel tend to resist corrosion very similar to a regular stainless steel knife, but allows for easy sharpening, giving that the metal isn't as hard!
